Here’s what you’ll need:
- 2 tbsp dark brown sugar
- ¾ cup tapioca flour/starch
- 4 tbsp water
- Black tea
- Oat or almond milk
How to make your own boba:
Step 1: Heat water and dark brown sugar together over medium heat until sugar dissolves. Turn off heat.
Step 2: Add 1 tbsp of tapioca flour and mix until smooth.
Step 3: Turn heat on again and as soon as the mix starts to thicken add the rest of the tapioca flour. Mix until the dough is very sticky, but smooth.
Step 4: Knead the dough on a lightly floured surface. Add extra tapioca flour as needed.
Step 5: Roll dough into long skinny rods. Cut into small pieces and quickly roll to form boba balls.
Step 6: Repeat these steps with the rest of the dough and your dried boba balls will be ready to go! Now it’s time to cook them.
Step 7: Place boba in water and bring to a boil for 15-20 minutes. Stir occasionally to prevent boba from sticking together, then remove from heat and let them rest for a few minutes. They’ll become darker and will expand as they cook, but will shrink back to their original size after removed from heat.
Step 8: Drain boba.
Step 9: Make your boba tea however you please. We like to add a little homemade simple syrup to the boba, then we combine equal parts black tea and oat milk. Grab your BiggieStraw, mix your boba and your tea… and suck it up!
